Nutrition Fundamentals

Course 102 Nutrition Fundamentals will assist health care professionals in understanding how, when and what types of nutrition approaches and interventions might be used in conjunction with conventional therapies to enhance health. This is important because an accruing number of effective, safe, non-pharmaceutical nutrition-based therapies are available yet not widely known or taught to clinicians. One example of this is the Mediterranean diet, or anti-inflammatory diet, particularly with regards to protective cardiovascular effects.

This course covers Principles of Nutrition in Integrative Practice, Nutrition Policy and Child Health, Challenges and Obstacles in Nutrition-Based Approaches, Nutrition and Development: Critical Time Windows, Healthy Weight: Strategies for Prevention, Nutrition Building Blocks (overview of Carbohydrates, Fats, Proteins0, Translating Building Blocks in a Healthy Diet-Practical Integration, Food Allergy and Sensitivity, Celiac Disease and Gluten Sensitivity, Environmental Toxicants, Food, and Pediatric Health: Raising Awareness.

Outcome Objectives

  • Identify pediatric patients that could potentially benefit from integrative medicine nutrition-focused treatment options.
  • Determine which medical conditions have robust supporting evidence for the use of nutrition-based integrative medicine treatment options in children.
  • Teach clinicians how to better educate parents about nutrition-based integrative medicine treatment options for their children.
